A Winter in the Factory: How Orthodox Tea Is Made

Winter is when we open the factory to apprentices, because winter is when there is time to explain. Orthodox manufacture is five transformations, and none of them can be hurried by anything except experience. First the wither: sixteen to eighteen hours of cool air moving through the leaf until it goes limp as cloth. Then the roll, which bruises the cells open and starts the chemistry. Then oxidation — the leaf resting, turning copper, filling the room with the smell of apples and honey. Then the firing, which stops everything at exactly the chosen moment, and finally the sorting, done by hand and eye. A CTC machine does in minutes what takes us two days. We take the two days. The cup explains why.
