Choose your tea, mind your water, and let the timer hold the patience for you.

1 · Choose your tea

Just off the boil. First flush rewards a slightly shorter, gentler steep.

The four movements

I

Warm the vessel

Rinse your pot or gaiwan with hot water. Cold porcelain steals the first degree of the brew.

II

Measure the leaf

Whole orthodox leaf needs room to open. Follow the measure beside the timer — never compress.

III

Mind the water

Fresh, soft water, heated to the mark. Re-boiled water is flat water.

IV

Decant fully

When the timer sings, pour every drop. Leaf left sitting in liquor turns bitter.
